Apple Crumble Bars

Apples are a staple in our household, even if it's not what the doctor ordered I love them so much I eat (at least) one most days! So any kind of apple pudding is right up my alley!!
For the crumble:
1 1/2 cup oats
1 cup oat flour
3/4 cup brown sugar
1 tsp cinnamon
1/2 tsp baking powder
1/4 tsp salt
1 tsp vanilla extract
1/4 cup butter, melted
For the filling:
2 tbsp butter
3 large Granny Smith apples, peeled, cored and sliced
1 tbsp cornflour
1 tsp cinnamon
1/4 tsp each nutmeg and mixed spice
1 tsp vanilla extract

Line a square baking tin with parchment paper and preheat the oven to 180C.

Add the oats, oat flour, brown sugar, cinnamon, salt, baking powder, vanilla extract, butter and sunflower butter to a large mixing bowl and stir to combine. This should leave you with a sticky, crumble-like mixture.

Pour 2/3 of this mixture into the prepared baking tin and press it down evenly. Reserve the rest of the mixture in the refrigerator for the topping.
In a medium pot on medium heat, melt the butter before adding in the sliced apple. Coat the apple in butter and then add in the honey and spices, stir to combine. Let this cook for around 3 minutes, stirring occasionally until softened. Add in the vanilla extract and the cornflour and mix to combine, let the sauce thicken adequately before taking off the heat, about 2 more minutes.

Pour the apple filling on top of the base crumble and press down evenly before sprinkling the reserved crumble on top of the filling.

Bake the crumble bars for 30-35 minutes until golden brown on top. Once baked, leave to cool completely before removing from the pan and slicing into squares. Drizzle extra honey over the bars and enjoy!
